Happy Strawberry Shortcake Day! This day has been named in honor of the sweet, light, sponge-cake dessert that is synonomous with summer.
Here’s a recipe from That Creative Mom Cooks! that the whole family can make… Have the kids help you mash the berries!
No-Bake Strawberry Shortcake
2 pints strawberries
1/2 cup sugar
1 package Sara Lee pound cake, thawed, cut into 10 slices
1 container whipped topping, thawed
Slice 1/2 of the strawberries; set aside. Halve remaining strawberries, add the sugar and mix and mash the berries to release their juice. Chill in the refrigerator.
Line the bottom of a 12 x 8-inch baking dish with pound cake slices. Top with 1 cup sliced strawberries, the rest of the strawberry syrup mixture and all of the whipped topping.
Place strawberry halves and remaining blueberries on whipped topping to garnish on top. Refrigerate until ready to serve.
